 Spice Applesauce Cake

Ingredients for Cake:

1 cup unsalted butter, 2 cups sugar, 2 cups unsweetened applesauce, 1 tsp vanilla, 3 cups all purpose flour, 1 tsp ground nutmeg, 1 tsp nutmeg, 1-3/4 tsp baking soda, 1 cup pecans chopped, 1 cup raisins

Ingredients for Frosting:

2 cups light brown sugar, lightly packed, 6-tbsp heavy cream, 1/4 cup unsalted butter, 1 tsp vanilla, 1 cup confectioners’ sugar 

Instructions:

Preheat the oven to 325 degrees. Grease a 9″ bundt pan and dust with flour. In the bowl mix cream, butter and sugar until light and fluffy using a hand-mixer.  Add applesauce and vanilla, beat to combine. The mixture will look curdled.  Sift together flour, cinnamon, nutmeg and baking soda.  Remove 1/4 cup of flour mixture to a medium bowl and toss with the pecans and raisins. Add the remaining flour mixture to the liquid ingredients and mix on low just until combined. Fold in the pecans and raisins. Pour into prepared pan and bake for 50 to 60 minutes.  Allow to cool in pan for 30 minutes. 

To make the frosting, place the brown sugar, cream, butter into a medium sauce pan and bring slowly to a rolling boil, stirring constantly.  Remove from the heat and stir in the vanilla and then the confectioner’s sugar.  Pour onto cake, allowing the frosting to run down the sides.
